MANGO COCONUT MOCKTAIL

I mixed-matched few ingredients (which were available in my hand at that time) for unannounced guest, and it came out really super duper hit. It was so delicious thrist quencher, not like smoothie, nor exactly like fruit juice. Yeh! it is something else, so I called it "Mango Coconut Mocktail". Honestly speaking, I was still convinced by it. A very appropriate appetizer for any occassion or festive days...So friends, lets try and enjoy this luscious mocktail.
INGREDIENTS:
2 Cups Mango Pulp
1 Cup Coconut milk
1/2 tsp Jaljeera powder
A pinch of Black Salt
2-3 Mint Leaves (optional)
3/4 Cup Sugar or as per the sweetness of mango
1 Cup Crushed Ice
Few Ice Cubes for garnishing
METHOD:
Combine mango pulp, coconut milk, sugar, mint leaves, jaljeera powder, black salt and crushed ice in a jar.

Blend the whole mixture nicely. First blend for 1 minute in high speed, then blend for another minute in low speed.

Pour equally in serving glass.

Garnish with ice cubes on the top. Serve chill.
Serves: 4

JUS DE GINGEMBRE

This is ginger juice with pineapple. Pineapple is a juicy tropical fruit. Fresh pineapple is a store house of many health promoting compounds, minerals and vitamins that are essential for optimum health. Actually, this is a juice of pineapple with lime, enhanced with the flavour of ginger. It smells and tastes so flavourful, served with ice, very perfect and refreshing one.

INGREDIENTS:
1 cup cubed Pineapple
1/3 cup Ginger, cut in thin slices
Juice of 1 Lemon
1 cup crushed Ice
Sugar to taste
Few ice cubes

METHOD:
Blend pineapple cubes, ginger cubes, lemon juice and crushed ice in a blender. Blend on high speed for 2 minutes.

Sieve it. Now add sugar in juice. Dissolve sugar in juice by stiring with a spoon. Pour equally in glasses.
Garnish with few ice cubes and serve immediately.

Serves: 2

FIZZY MANGO WATERMELON JUICE

This mango watermelon creation is one of my favorite juice recipes. Mangoes are the good source of fiber as well as watermelon is a source of minerals. The smooth texture of this juice not only fulfill our thrist, it gives a refreshment too. Honey and black salt added a little twist in it. It is a great healthy way to stay cool and invigorated this Summer.

INGREDIENTS:
1 peeled & pitted Mango (or 1cup mango pulp)
1 cup cubed Watermelon
1 cup crushed ice
2 tsp Honey (if required)
1/4 tsp Black Salt
Few Ice cubes

METHOD:
Blend mango and watermelon on high speed for 30 seconds till both are not fully blended.

Now add crushed ice, jaljeera powder, black salt and honey. Stir gently and mix well. Blend for another 1-2 minutes to get a smooth juice.

Pour into glass. Garnish with ice cubes. Enjoy!!!

WATERMELON AGUA FRESCA

Watermelon is a Summer fruit. This drink is icy cold and can quench thirst on these hot days. Watermelon juice tastes sweeter because of its lower acidic level. 'Agua Fresca' is a Mexican boon to parched throats, its meaning 'fresh water'.  I gave a little Indian twist in it. This juice seems like a nectar from heavens.
INGREDIENTS:
1 cup of Watermelon (chilled, seeded & cubed)
1 cup of crushed ice
2 tsps Honey
1 tbsp fresh Lemon Juice
1/2 tsp Ginger juice (optional)
1/3 tsp Chat masala
A pinch of finely grounded Black Pepper


METHOD:
Blend watermelon and ice into a thick drink.

Now add honey, lemon juice, ginger juice, chat masala and grounded black pepper. Again blend all-together.

Pour the drinks into glasses, slide a watermelon wedge on the side of the glass to garnish.





Serve immediately.

REFRESHING JEERA LEMONADE

It is so simple and perfect for hot days, when you don't feel to do much. This great refreshing drink makes you feel cool in the hot Summer. Honey adds some more flavour in lemonade.

INGREDIENTS:
2 tbsps fresh Lemon juice
2 tbsps honey
A Pinch of Black salt (optional)
1/2 tsp Jaljeera powder (Available in Indian grocery)
4 tbsps chilled water
12 OZ / 355 ml Soda (unsweetened and chilled)
Few Ice Cubes


METHOD:
In a bowl, combine chilled water, lemon juice, honey, black salt and jaljeera powder. Stir well till everything mix throughly.

Now divide this mixture into 2 serving glasses equaly. Pour chilled soda on those glasses and stir to mix well.
Serve over ice with a lemon slice to garnish.

BANANA AND MANGO SMOOTHIE


It's so refreshing and perfect during hot Summer days. Even so simple, it can be made in a flash. Banana gives a creamy texture and tropical fruit mango gives colour and flavour. It is simply nectareous.


INGREDIENTS:
1 Cup Mango Pulp
2 Bananas
1/2 Cup Plain Yogurt
2 tbsps Honey
1 tbsp fresh Lemon Juice
A pinch of Black Salt (optional)
12-14 Ice Cubes


METHOD:
Keep mango pulp in refrigerator for 2 hours before using.

Peel bananas and cut into chunks.

In a blender, combine mango pulp, banana, yogurt, honey, lemon juice and black salt. Blend till smooth. Add 8 ice cubes, cover and process until blended.

Pour into chilled glasses, garnish with remaining ice cubes. Serve immediately.
