Bengali chutney are totally different from the chutneys of other provinces, not only tastewise but also in sticky texture. This is the king of all chutneys in Bengali cuisine. Basically, this is a must have sweet chutney after every bengali meal in occassions. A sweet thick chutney that serves with fried papad.


250 gm Dates (Khejur)
200 gm Mango Papad (Amsotto)
50 gm Raisins
1/3 Cup Pomegranate Seeds (Optional)
1 tsp Roasted Cumin Seeds (pounded)
1 Cup Sugar
1/2 Cup Water
1 tbsp Fresh Lemon Juice
1/2 tsp Salt


De-seed dates. Cut mango papad in 1/2" cubes.
Heat sugar and water in a wok or pan, keep stirring continuously.
When bubbles come on sugar syrup add dates, mango papad, raisins one by one and keep stirring.
Add salt and cook for 2-3 minutes on medium flame.
Now add pomegranate seeds, lemon juice and roasted cumin powder. Give a nice stir and remove from heat now.

Let it cool normally. May garnish with few pomegranate seeds and sprinkle with pinches of roasted cumin powder.
Serve immediately after the main course of lunch or dinner. May pour it in a air-tight container and refrigerate for two weeks.

1/2 Cup Wheat Flour (atta)
1/4 Cup Sugar (as per taste)
5 Cashewnuts (chopped)
4 Almonds (chopped)
1 tbsp Raisins
5-6 Pistachios (chopped)
1/4 tsp Pounded Cardamom
1/4 Cup Clarified Butter (ghee)
1&1/4 Cups Water

Heat 2 tbsps clarified butter in a pan or wok. Add wheat flour in it. Keep stirring till it becomes dark brown. Be careful, not to burn the flour.

Now simmer the heat and add water and sugar in it.

Stir until all lumps get dissolved.

Cook on medium flame. Add 1 tbsp clarified butter more. Keep a nice stir.

Add chopped dry fruits and raisins in it. Fold well.

Add remaining clarified butter now. Cook till it gets thick consistency.

Turn off the heat, add pounded cardamom in it.

Delicious 'Halwa' is now ready to serve.

Serve hot by garnishing with chopped almonds and pistachios.

Bottle gourd / lauki / dudhi halwa is a very popular dessert made by grated bottle gourd, mawa, sugar and clarified butter (ghee). Bottle gourd is a light vegetable with mild flavour, so many kids or adults are not much fond of eating bottle gourd, but trust me they will surely love this yummy dessert. When I saw this recipe on Homely Food, could not resist myself to prepare this toothsome sweet which I inherited  from my Mom, it is made in our house at the time of Durga puja or Lakshmi puja. As I saw, how she cooked this dessert in a fast way, I tried to follow her. Hope you will enjoy this traditional Halwa.

3 Cups Grated Bottle Gourd
4 Strands of Saffron Soaked in 3 tbsps Warm Milk
2 tbsps Clarified Butter (ghee)
Sugar 5-6 tbsps (as per taste)
1/3 Cup Grated Mawa (khoya)
1/4 tsp Coarsely Pounded Green Cardamom
5 Cashewnuts (chopped)
5 Almonds (chopped)
5 Pistachio (chopped)
1 tbsp Raisins
1 tsp Poppy Seeds/khus khus (optional)

Heat clarified butter in a wok or pan. Add grated bottle gourd in it. Saute for 2 minutes. Don't get bottle gourd brown.

Add saffron milk in it, mix nicely. As bottle gourd leaves lots of water, so cook on high flame. Stir continuously for 2 minutes. (Alternatively may use condensed milk too)

Add coarsely pounded cardamom powder in it. Stir for another 5 minutes till the excess water from bottle gourd evaporates.

Now add chopped nuts and raisins in it. Fold nicely.

Pour sugar and mawa in it. Mix well. Stir continuously for another 3 minutes on high.

Once the water evaporates completely, add khus khus, stir nicely and turn off the heat now. Take it out in a serving bowl. Garnish with cashew, almonds and pistachio. Serve hot.

This is a very popular ladoo among North Indians. Besan ladoos are made from gently roasted gram flour or besan. My mom mostly prepared it at the time of Navratri, Holi and Diwali. She made it very perfectly and tasty. Anytime, without any occassion we can have it. Yummy and delicious, yet easy to make ladoos are loved by all!!!


1 Cup Gram Flour (besan)
3/4 Cup Powdered Sugar
8 tbsps Clarified Butter (ghee)
1/2 tsp Cardamom Powder


Heat clarified butter in a microwave safe bowl at 100% MW power for a minute.

Remove the bowl from microwave, add gram flour and mix it very well, there should not any lump.

Microwave at 100% MW power for 4 minutes, stirring it after every 1 minute. Again microwave at 50% MW power for 3 minutes, stirring it after each minute.

Remove from oven add sugar and cardamom powder in it. 

Mix it thoroughly. Let it cool. 

Divide into small portions and give them a shape of ladoos. Store it in air-tight container.

'Aloo Tikki' is a famous North Indian street food. I made little variation with this recipe and loaded with mashed green peas, carrot, coriander leaves with a various of Indian spices. You may use this tikki as a patties in Burger. Though it is a street food, but while made it in home, is very healthy and delicious.


2 Potatoes
1/2 Cup Green Peas (blended in mixer)
1/2 Cup Grated Carrot
2 tbsp Finely Chopped Coriander Leaves / Cilantro
2 Green Chillies (finely chopped)
3-4 tbsps Bread Crumbs
1 tbsp Fresh Lemon Juice
1 tsp Cumin Seeds (roasted & powdered)
1/3 tsp Chaat Masala
1/3 tsp Garam Masala
Salt to taste
1/2 Cup Oil For Frying


Boil, peel and mash potatoes nicely.
In a large bowl, combine mashed potato, green peas, carrot, coriander leaves, green chilli, bread crumbs, lemon juice, roasted cumin powder, garam masala and salt. Mix the whole thing together nicely. Refrigerate the dough for 1 hour.
After that, take a small portion from this dough, give a shape of ball, press it round gently to make a flat round pattie or tikki. Repeat the procedure for all pieces. I made 15 tikkis from this entire dough.
Heat oil in a non-stick pan. Fry tikkis till crisp golden brown from both sides. Drain on a paper towel.

Sprinkle chaat masala on the top. Serve hot with your favourite chutney or ketchup.

Today I am going to post this challenged recipe as I am the part of famous SNC team. South vs North Challenge doesn't require any introduction, which is created and owned by our sweet friend Divya Pramil. I am a part of Northern Team, triedout the recipes challenged by Southern Team arround the year. 

This month SNC completed 1 year, so this is the 'month of celebration' where Divya suggested to cook any of the 24 challenged recipes. All over India, people are in festive mood, our main festival 'Diwali' is knocking the door. This is the special time for all Indians for some special treats. Thus, I choosen the recipe "GULAB JAMUN", challenged by Pallavi Purani. This is a very famous traditional Indian sweet and really a very toothsome dessert as we all love it..."Yeh dil mange more....", thanks Pallavi for this awesome dish.


1 Cup Powdered Milk
1&1/2 tbsp Semolina (sooji/rava)
3 tbsp Wheat Flour / All Purpose Flour (maida)
1/3 tsp Baking Powder
4 tbsp Clarified Butter (ghee)
1/2 Cup Cream
Oil / Clarified Butter To Fry


1 Cup Sugar
1 Cup Water
1/4 tsp Saffron (kesar/zaffran)
5-6 Cardamom Pods (lightly crushed)


Sift milk powder, wheat flour, semolina and baking powder in a bowl. Add clarified butter in it and mix thoroughly. Knead it nicely by adding cream to make a soft smooth dough.
Bring the dough together and with a palm greased with ghee make a ball and place in a bowl. Cover with a kitchen towel and let it sit for 30 minutes.
On the other side, to make sugar syrup, bring the sugar and water to boil. Add saffron and cardamoms in it. Let sugar dissolves completely and boil it for 8-10 minutes on medium flame.
Make small balls out of the dough. Mean while you can fry the rolled jamuns. Heat sufficient oil on full flame in a pan . Once it smokes, reduce the flame to medium. After the smoke disappears, add one dough ball first. If it turns black instantly, you must reduce the flame to low-medium. We are looking for an inviting brown color on the dough balls. Be sure to constantly rolling the balls in the oil so that they get an even color, don't dump the jamuns so many in oil.
Remove jamuns from oil by using a slotted spoon when gulab jamuns are evenly golden and browned and add them directly into the sugar syrup. Keep the jamuns in the sugar syrup for atleast 3-4 hours before serving, which will make the jamuns soft and sweet from inside.

Warm in the microoven, serve gulab jamun hot with topped with little cream or pistachios. But I personally love to have warm gulab jamun topped with a scoop of vanilla ice-cream.
